You can’t really change classes. Retraining was a thing from older editions that didn’t make its way into 5e. You cannot undo class, skill, or feat choices, as there is no provision in the PHB for doing so.
How does armor class go up?
Armor is one of the most common ways to increase Armor Class in 5e. A character’s ability to wear armor directly ties to the class they take, though their ability scores and any feats they have also come into play.
Does AC go up when you level up?
AC is only one form of defense, and doesn’t typically grow with level. What you’re running into is the concept of Bounded Accuracy.

Bring the new PC in at the current level and if everyone else has a magic item, it might not hurt to let them pick one out (the current rules for higher level PCs involve no awarding of magic items, or more than basic cash, I expect fuller rules on this in the PHB). How do you change your class in RuneScape?
