A monk can use his quarterstaff two handed, then kick for his unarmed strike bonus action. Eventually, the monk’s unarmed damage die will overtake the quarterstaff damage die and he’ll stop using the quarterstaff entirely at that point anyway.
Can a monk use versatile weapons?
Yes, monks can use Versatile weapons for bonus damage. Since quarterstaves and spears don’t have that property, you can use them as versatile weapons all you want.

Monk should use low level (level 1-2) a weapon and use only the unarmed attack in special case. Darts are not a bad choice or you can go with katana or scimitar. Later you can learn single weapon proficiency (or if you do not like darts, give him/her scimitar+single wpn. prof).

By 4th level, the monk gets 3 attacks every 2 rounds with his fists doing 1d8 damage versus 1 attack with any other weapon (other than a dart) so from that point I am going with fists except where a magic weapon is required.

Throwing two daggers, one in each hand, as the normal attack, the grabbing two more from your belt to throw. Perhaps make a high dexterity, 17+ to be able to do this. With the speed of attack a monk is capable of, it makes sense it would be rather easy for them to do. Just weapons easily grabbed and used.
Can you take savage attack with Monk’s fists?
You could take Savage Attack with the Monk’s Fists (it applies to the base damage to give +2-3 damage) and Vulnerable Attack with Bittercut (according to MaxQuest’s table they stack) but even then this only just brings Bittercut’s Damage to parity with the Fists.
