When extended again, the piston does not stop the water flow. The only way I’ve found to do so is to click with an empty bucket in the same block the piston is in. It’s like another source block was created somehow, as the water above the piston stays.

Water, lava, plants, and various other blocks cannot be moved via pistons. The work-around for this is to have a sticky piston pull a block out of the way, allowing the water to be unblocked and able to flow. Cant move source blocks with pistons. Its just impossible.
