While you’re grappled, you don’t have any limitations on your attacks or spells, just your movement, so swing away until you can get away!
Does a grapple count as an attack?
The reason a grapple or shove doesn’t “count as an attack action” is that nothing counts as an attack action. You have the Attack action, which allows you to make attacks. These attacks aren’t themselves actions, nor do they constitute the Attack action. Now, grapple and shove are both a special sort of attack.
Is escaping a grapple an attack action?
A grappled creature can use its action to escape. To do so, it must succeed on a Strength (Athletics) or Dexterity (Acrobatics) check contested by your [or the roc’s, in this case] Strength (Athletics) check.

Well, in order to grapple, you need to take the Grapple action. It’s considered a special melee attack, and replace one of your attacks if you have multiple attacks. You must have one free hand, and the target must be no more than one size bigger than you, and must be within your reach.

Can you use a grapple or shove as an opportunity attack?
It lines up with the fact that, if you get multiple attacks with one Attack action, you can replace one of your attacks with a Grapple or Shove. I don’t understand the intention behind not allowing Grapple or Shove as an Opportunity Attack. It gives a really nice crowd control option for melee characters that doesn’t require the Sentinel feat.

Do you have to take the disarm action?
Disarm doesn’t specify that it requires the Attack action, only that it has to be a weapon attack. Disarm is under the “Action Options” heading. It is a new option for your Action, not a replacement for an attack. Or to put it another way, to disarm you must take the Disarm Action, not the Attack Action.
