The ready action cannot be used to postpone your entire turn, you can either move or use an action (decided when readied) such as attack (one attack, no extra attack), cast a spell (the slot is consumed when it is readied and it takes concentration), interact with objects, or perform some other action.
Does Ready action Use your reaction?
When you ready an action, you can later use your reaction to “release” the action you had held in response to a certain trigger. From the “Ready” section, PHB, p. 193: When the trigger occurs, you can either take your reaction right after the trigger finishes or ignore the trigger.
Can you ready the Dodge action?
Dodge is described in the rules under “actions in combat”. In other words, to answer the title question you can dodge before combat starts, but doing so would start timekeeping in rounds. You don’t have to do it this way, though, and in fact, I think the normal approach would be to use the Ready action.

The RAW answer is that the spell is wasted. The slot is used as soon as you take the Ready action and the rules for the Ready action give you until the start of your next turn to use your reaction.

When do you use your reaction on a turn?
On your turn you have a Move Action & an Action & possibly a bonus action. You can use your action to do specific things like dash, disengage, use an object/item, ready an action, etc. Reactions are only taken when they meet some sort of condition. You have 1 reaction, ever per turn.
Can You Ready an action to run away?
So you use your action Ready to run and then, when a monster approaches you, you may use your reaction to move away. Generally you won’t also be able to also Dash since that would require another action. You can’t use Dash. Update: To be clear, you can ready your move action instead of your action, but you cannot do both (thanks to J. A. Streich for pointing this out). Per Jeremy Crawford, official rules designer for 5e: When you use Ready, you prepare an action or a move, not both. 5e doesn’t use the terms “move action” or “free action” anymore.
Can you use a ready action on a turn?
On your turn, you can move a distance up to your speed. You can use as much or as little of your speed as you like on your turn, following the rules here. There are no rules about having or using movement on other turns than your own. Is this an oversight? Yes you can. The Ready action is what you’re looking for.
