You can take each feat only once, unless the feat’s description says otherwise. The Magic Initiate feat does not say it can be taken twice.
Can Magic initiate change spells?
You can’t automatically replace the Magic Initiate spells later on. If a rule allows for retraining it would say so. Magic Initiate does not have any such rule.

Can a sorcerer learn spells outside of level up?
Rules as written; no. A Sorcerer cannot learn new spells except at level up. In fact, the only class that can “learn” new spells is the Wizard. It’s baked into their class. Other spellcasters have no mechanical way in the rules to learn new spells outside of level ups or rests.
Can you cast a 1st level spell with the Magic initiate feat?
Yes, the feat doesn’t say you can’t. For example, if you’re a wizard and gain the Magic Initiate feat, you can choose wizard and thereby learn two more wizard cantrips and another 1st-level wizard spell. If you have spell slots, can you use them to cast the 1st level spell you learn with the Magic Initiate feat?
What do you need to know about sorcerer cantrips?
You learn additional sorcerer cantrips of your choice at higher levels, as shown in the Cantrips Known column of the Sorcerer table. The Sorcerer table shows how many spell slots you have to cast your spells of 1st level and higher. To cast one of these sorcerer spells, you must expend a slot of the spell’s level or higher.
When do you regain expended spell slots in Sorcerer?
You regain all expended spell slots when you finish a long rest. For example, if you know the 1st-level spell burning hands and have a 1st-level and a 2nd-level spell slot available, you can cast burning hands using either slot. You know two 1st-level spells of your choice from the sorcerer spell list.
