Dragonborn scale color does not effect alignment. In fact, alignment doesn’t actually effect anything. Its a role-playing guide, nothing more. So sure, your player can eventually become a red dragon, but not be evil.
Is dark vision important?
It’s useful, but unless the party is entirely composed of races with Darkvision, only situationally so. After all, in your example above, the humans all had to carry torches when hanging out with the dwarves, so the dwarves weren’t getting any advantage from that ability during those times.
