The freedom of movement spell protects you against the paralyzed and restrained conditions, in addition to its other benefits. It doesn’t stop the petrified condition.
Does greater restoration remove petrification?
Petrified is a condition, there are currently two spells that remove it. Greater Restoration as mentioned here, and Wish, the 9th level spell. Usually there are also consumables (potions/salves/oils) that will remove petrification, however we have not seen any of those yet (we’ll likely see them with the DMG though).

If you’re trying to end petrification resulting from something that’s not a spell, like a Beholder ray, Dispel Magic won’t work. You’ll definitely need Greater Restoration for that. It is a spell with a duration, so you can try Dispel Magic on it.

What can you do with the petrified condition?
The Petrified condition is actually supporting your idea; it’s canon. :p Note the “incapacitated”, “unaware of surroundings”, and, most importantly, “ceases aging”. Since it also suppresses poisons or diseases, perhaps it can be used as a desperation measure to prevent deaths until an antidote or cure can be found.
When does flesh to stone spell expire in RuneScape?
Petrified, like most conditions, expires when the effect that causes it says so – Flesh to Stone ends when the spell ends unless the full minute is concentrated on, in which case the spell becomes permanent, meaning you can end it with Dispel Magic, or temporarily suppress it with Antimagic Field .
