When a victim is immune to poison damage, they only take the piercing, and they can’t get poisoned regardless of whether that attack gets them to 0 or not. Damage from a saving throw isn’t part of the attack that caused the saving throw (for instance, it doesn’t get rerolled on a critical hit).
