How do cantrips work with Multiclassing?

Cantrips act like 4e’s At-Will spells and as such level with each “tier” in 5e to maintain their usefulness. Tying this to character level means that players who multiclass or for example start off with a free cantrip (such as High Elves) are still able to make use of those cantrips throughout the whole of the game.

Do cantrips level up?

Cantrips scale with the character level. Cantrips scale according to your character level, not your class level.

Can a multiclass spellcaster cast only wizard spells?

There aren’t ‘Wizard’ or ‘Cleric’ slots, for example – just ‘spell slots’. So your PC might cast only Eldritch Knight spells with all their slots or only Wizard spells with all their slots or some combination of both. So, yes, you should ignore the class tables and just look at the table for multiclass spellcasters.

You currently need to invest in 3 different spellcasting abilities on top of Dexterity for AC and Constitution for concentration saves. You’re also missing out on higher level spells like Dispel Magic, Fireball and Revivify that lower level spells simply can’t imitate even with higher level slots.
