Go to your badges page (your name > badges), click on the game you want to see the cards of and it will display them to you. You can easily see which cards you have and which ones you are missing. Steam will also display a list of friends who own each card that you’re missing.

It would make the steam client a lot nicer if I never had to see any of it again. There doesn’t seem to be any way to just delete cards from your steam inventory. To piggyback on what @Nitrous Oxide (Awesome name) Said… You cannot stop/turn off the Steam Trading Card system.
