Can mold Earth move lava?
So, mold earth can effect stone to some degree, and lava is molten stone. the first effect can only effect dirt, so you can not possibly excavate lava or even move it.
Does mold Earth work on sand?
It should “work” as sand almost certainly counts as loose earth, but it may not function as you imagine. Sand is loose (with an angle of repose of about 30 – 35 degrees) and won’t form walls / ceilings etc. The spell will excavate / move it, but it won’t pack it down or solidify it.

I’d say a good rule of thumb is that anything that could be dug and moved with a shovel could be dug with Mold Earth. Sand, soil, gravel, etc. Useful cantrips tend to magically replicate mundane activities. I would allow some flexiblty with the spell to retain its gameplay usefullness. It is Dungeon and Dragons not Farming and Cattle.
