Unfortunately, short of making a checklist beforehand, or revisiting each area, there is no way to tell which ones you have or haven’t got. The exception is the very first Jecht Sphere you receive. You will always be given one after defeating Spherimorph.

Also, if you do backtrack as soon as you can you will actually see the footage form them in order. And if you play this on steam you can press F1 (speed) and F4 (battles) if you just quickly want to run back. You can backtrack, but it’s important to do so shortly after beating the Spherimorph boss.
