The key is that the game looks for the closest portal in the destination dimension, so if you build both portals in the “right” places (overworld x and z divided by 8 in the nether), before lighting either of them (Obviously you need an original set of portals to do this), then you can connect them properly.
Why do Piglins disappear in the Overworld?
Somehow the wither skeletons end up being able to fit through the slabs that are behind the portal and kill the Piglins. If you put a layer of top slabs at the top end of each portal, on the long side of each spawning floor directly below the grass, this will be fixed.
Can you light a nether portal underwater?
